  • 1 cup mashed sweet potatoes (about 1 medium sweet potato)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 3/4 cup milk (or your preferred non-dairy milk) Use non-dairy milk if preferred
  • 2 tablespoons honey (optional, for added sweetness) Use if you desire extra sweetness

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the sweet potato. Boil until tender, about 15-20 minutes. Mash until smooth and let cool slightly.
  • In a large mixing bowl, combine flour, baking powder, and salt. Mix thoroughly.
  • Add the cold diced butter to the flour mixture. Work the butter into the flour until it resembles coarse crumbs.
  • Gently fold the mashed sweet potato into the flour mixture.
  • Slowly pour in the milk and honey (if using). Stir until just combined.
  • On a lightly floured surface, turn out the dough and press it to about 1-inch thickness. Use a biscuit cutter or glass to cut out biscuits.

Baking

  • Place the biscuits on a baking sheet lined with parchment paper and bake for about 15-20 minutes, or until golden brown.

Serving

  • Allow the biscuits to cool for a minute before serving warm with butter or honey.

Notes

Use cold ingredients for flaky layers. Do not overwork the dough, and feel free to experiment with added flavors like herbs or spices.
