  • 1/4 cup sugar (or honey for a healthier twist)
  • 1/4 cup rice vinegar
  • 2 tablespoons chili paste Adjust according to heat preference.
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic, minced
  • 1 teaspoon cornstarch (optional, for thickening) Combine with water to create a slurry if thickening is desired.
  • Salt and pepper to taste

Preparation

  • Prepare the Pineapple: If using fresh pineapple, chop it into small chunks. If using canned, drain the excess juice.
  • Mix the Ingredients: In a medium-sized saucepan, combine the pineapple chunks, sugar (or honey), rice vinegar, chili paste, soy sauce, and minced garlic. Stir well to combine.
  • Cook the Sauce: Heat the mixture over medium heat. Stir occasionally to prevent sticking. When the mixture begins to bubble, lower the heat and let it simmer for about 10 minutes.
  • Thicken the Sauce (optional): If you prefer a thicker consistency, mix cornstarch with a tablespoon of water to create a slurry. Add this to the sauce and stir until the sauce thickens to your liking.
  • Season to Taste: Finally, adjust the seasoning with salt and pepper as needed.
  • Cool and Store: Remove from heat and let cool before serving, or store in an airtight container in the refrigerator for later use.

Notes

This sauce pairs beautifully with grilled chicken, fish, stir-fried vegetables, and can be used as a dipping sauce for spring rolls.
