  • 1 lb chicken thighs, boneless and skinless
  • 2 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 3 tbsp honey
  • 1 tbsp sriracha more if you like it spicier!
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Preparation

  • Start by cutting the boneless, skinless chicken thighs into bite-sized pieces to ensure even cooking.
  • In a bowl, mix together the soy sauce, honey, sriracha, rice vinegar, minced garlic, and grated ginger to create the marinade.
  • Add the chicken to the marinade and coat well; let it sit for at least 10 minutes, or up to 1 hour in the fridge.
  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add the marinated chicken to the skillet and sear for about 6-8 minutes, stirring occasionally, until fully cooked and slightly caramelized.
  • Season with salt and pepper, and garnish with green onions and sesame seeds before serving.

Notes

Consider substituting honey for maple syrup or adding pineapple juice for an extra layer of sweetness. Store leftover chicken in the refrigerator for up to 3 days in an airtight container or freeze in a freezer-safe bag for up to 3 months.
