  • 4 pieces bone-in chicken thighs (skin-on for crispiness)
  • 1 cup fresh orange juice (about 3-4 oranges) Fresh orange juice is key.
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ginger (grated)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (for some smokiness)
  • Fresh herbs for garnish (like parsley or cilantro) Garnish before serving.

Preparation

  • Preheat your oven to 400°F (200°C) to ensure a nice and crispy skin on your chicken.
  • In a bowl, combine the orange juice, olive oil, minced garlic, soy sauce, honey, grated ginger, salt, black pepper, and paprika. Whisk them together until well mixed.
  • Place the chicken thighs in a baking dish and pour the marinade over them. Make sure the chicken is well coated. Allow it to marinate for at least 30 minutes, or a minimum of 10 minutes if short on time.

Cooking

  • After marinating, place the chicken, skin side up, in the oven. Roast for about 30-35 minutes, or until the chicken is cooked through, and the skin is crispy.
  • Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).
  • Once done, remove the chicken from the oven and let it rest for a few minutes before serving.

Notes

For extra flavor, add slices of oranges to the baking dish. Store leftovers in an airtight container for 3-4 days. Reheat at 350°F (175°C) for 15-20 minutes.
