Preparation

  • Preheat your oven to 425°F (220°C).
  • Rinse and cut the broccoli into small florets. Peel and slice the carrots into thin rounds.
  • In a large bowl, combine the broccoli and carrots. Drizzle with olive oil, then sprinkle with garlic powder, salt, and pepper. Toss to coat evenly.
  • Spread the seasoned veggies on a large baking sheet in a single layer, ensuring they have space to roast.

Cooking

  • Bake for about 20-25 minutes until the edges turn golden brown, stirring halfway through for even roasting.
  • Once done, drizzle with lemon juice or sprinkle with lemon zest before serving warm.

Notes

You can substitute seasonal vegetables like bell peppers, cauliflower, or zucchini for variety. Keep an eye during the last few minutes of roasting to prevent burning.
