Ingredients
  

Quiche Base

  • 1 cup cottage cheese
  • 3 large eggs
  • 1 cup milk (or a non-dairy alternative) Use your preferred milk or a suitable alternative.

Add-ins

  • 1 cup sundried tomatoes, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup spinach leaves (fresh or thawed from frozen)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • Fresh herbs (such as basil or parsley) for garnish (optional) Optional for garnish.

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with a little oil or cooking spray to prevent sticking.
  • In a mixing bowl, combine the cottage cheese, eggs, and milk. Whisk until well blended and smooth.
  • Stir in the garlic powder, salt, and pepper. Mix well to ensure even seasoning throughout the batter.
  • Add the chopped sundried tomatoes, feta cheese, and spinach to the mixture. Stir gently until everything is evenly combined.
  • Pour the mixture into the greased baking dish and spread it out evenly.

Cooking

  • Bake in the preheated oven for 30-35 minutes, or until the center is set and the top is lightly golden.
  • Remove from the oven and let it cool for a few minutes before slicing. Garnish with fresh herbs if desired.

Notes

Store leftovers by wrapping tightly with plastic wrap or transferring to an airtight container; refrigerate for up to 3-4 days. Reheat individual portions in the microwave for 1-2 minutes or in the oven at 350°F for about 10-15 minutes.
