  • 4 cups mixed greens (spinach, arugula, or your favorite)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, diced
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled Feel free to substitute with Halal-friendly cheese
  • 1/4 cup olives, sliced (green or black)

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Preparation

  • Wash the mixed greens thoroughly and pat them dry with a paper towel or salad spinner.
  • Slice the cucumber, halve the cherry tomatoes, dice the bell pepper, and thinly slice the red onion.

Dressing Preparation

  • In a small mixing bowl, whisk together the olive oil, balsamic vinegar, and Dijon mustard. Season with salt and pepper to taste.

Assembling the Salad

  • In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion. Gently toss them together.
  • Sprinkle the feta cheese and olives over the top.
  • Drizzle the homemade salad dressing over the salad just before serving and toss gently to combine all the ingredients.

Notes

For a protein boost, consider adding grilled chicken or chickpeas. Make the dressing just before serving for the freshest taste. Store leftovers in an airtight container in the fridge for up to 2 days, keeping the dressing separate to maintain crispness.
