Salad Ingredients

  • 2 pieces ripe peaches, halved and pitted Look for peaches that are slightly soft to the touch for optimal sweetness.
  • 4 cups mixed greens (arugula, spinach, and romaine)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted walnuts or pecans Feel free to swap walnuts for almonds or pecans.

Dressing Ingredients

  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Salt and pepper to taste

Preparation

  • Preheat your grill to medium heat. If using a grill pan, heat it on your stove over medium heat.
  • Brush the cut sides of the peaches lightly with olive oil. Place them cut-side down on the grill and cook for about 4-5 minutes until they have grill marks and are slightly soft.
  • In a small bowl, whisk together balsamic vinegar, honey, olive oil, salt, and pepper until well combined.
  • In a large bowl, toss the mixed greens with a small amount of the dressing.
  • Arrange the dressed greens on a serving platter. Top with grilled peach halves, crumbled feta cheese, and toasted nuts.
  • Drizzle additional dressing over the top if desired and serve immediately.

Notes

Dress the greens lightly just before serving to avoid wilting and keep them crisp. Store salad components separately for maximum freshness.
