- 4 medium summer squashes zucchini or yellow squash
- 1 small onion diced
- 2 garlic cloves minced
- 1/2 cup diced bell peppers
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
