Stuffed Chicken Breasts with Spinach

  • 4 large boneless skinless chicken breasts
  • 1 cup fresh spinach chopped
  • 1 cup cream cheese softened
  • 1 cup mozzarella cheese shredded
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  • Prepare the Spinach Filling: In a medium-sized bowl, mix together the chopped spinach, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper until combined.
  • Stuff the Chicken: Butterfly each chicken breast (cut them open without completely separating). Generously fill them with the spinach mixture and secure with toothpicks if necessary.
  • Sear the Chicken: In a skillet over medium heat, add a splash of olive oil. Sear each stuffed chicken breast for about 3-4 minutes per side until golden brown.
  • Bake: Transfer the seared chicken to a baking dish and place it in the oven. Bake for around 20-25 minutes or until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
  • Serve and Enjoy: Remove from the oven, let it rest for a few minutes, and then serve hot. Don't forget to remove any toothpicks before serving!
