Preparation

  • Begin by washing the strawberries thoroughly. Hull and quarter them, placing them into a mixing bowl.
  • In a blender or food processor, blend the strawberries with sugar and lemon juice until smooth. This should take about 1-2 minutes. Taste the puree and adjust sweetness if necessary.
  • In a large mixing bowl, use an electric mixer to whip the heavy cream and vanilla extract until soft peaks form. Be careful not to over-whip, as this can turn the cream grainy.
  • Gently fold half of the whipped cream into the strawberry puree until well-mixed. Then, carefully fold in the remaining whipped cream until you achieve a light, airy texture.
  • Spoon the mousse into serving glasses and refrigerate for at least 2 hours, allowing it to set perfectly.
  • Once set, top with extra whipped cream, sliced strawberries, or a mint leaf for an eye-catching presentation!
