- 1 3 oz box of strawberry gelatin
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1/2 cup lemon juice
- 1 cup diced strawberries
- 8 oz cream cheese softened
- 1/2 cup unsalted butter softened
- 4 cups powdered sugar
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
Step 1: Prepare the Cake
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper for easy removal. In a large mixing bowl, combine the cake mix and strawberry gelatin. Add the eggs, vegetable oil, water, and lemon juice. Mix everything together until smooth. Gently fold in the diced strawberries.
