  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped Use ripe, fresh strawberries for best flavor.
  • 1 unit zest of 1 lemon
  • 1 unit juice of 1 lemon

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with non-stick spray or line it with parchment paper.
  • In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until well blended.
  • Add in the eggs, one at a time, stirring well after each addition. Mix in the vanilla extract until fully incorporated.

Mixing dry ingredients

  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  • Gently fold in the chopped strawberries, lemon zest, and lemon juice until evenly distributed throughout the batter.

Baking

  • Pour the batter into your prepared baking dish, spreading evenly. Bake for 25-30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Let the blondies cool in the pan for about 10 minutes before transferring them to a wire rack. Cut into squares and enjoy.

Notes

Serve with vanilla ice cream or whipped cream. Can be stored in an airtight container for up to 3 days or refrigerated for up to one week. They freeze well for up to three months.
