Ingredients
  

For the Cheesecake Filling

  • 8 oz cream cheese, softened Make sure it's at room temperature for easy blending.
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup whipped topping Fold in carefully to maintain texture.

For the Crunchy Topping

  • 1 cup crushed graham crackers Oreo cookies or digestive biscuits can be used as substitutes.
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 cup diced strawberries Fresh or frozen can be used.

Instructions
 

Prepare the Crunchy Topping

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Mix well until the mixture resembles wet sand.
  • Evenly spread the mixture onto a baking sheet lined with parchment paper and bake for about 5-7 minutes until golden and fragrant. Set aside to cool.

Make the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add the granulated sugar and vanilla extract, continuing to mix until well combined.
  • Carefully fold in the whipped topping until combined and smooth.

Assemble the Bites

  • In a silicone mold or lined muffin tray, spoon a layer of the cheesecake filling into each cavity, filling them halfway.
  • Add a spoonful of diced strawberries on top of the cheesecake filling, then top with more cheesecake filling until just about full.
  • Finally, sprinkle the cooled crunchy topping generously over each bite.

Chill and Serve

  • Place the assembled bites in the refrigerator for at least 1-2 hours or until set.

Notes

These bites can be stored in a covered container in the fridge for up to 4 days. They can also be frozen for up to a month. Avoid reheating in a microwave; instead, let them come to room temperature before serving.
