Ingredients
  

For the Filling

  • 8 oz cream cheese, softened
  • 1 cup fresh strawberries, chopped
  • 1/4 cup powdered sugar plus more for dusting

For the French Toast

  • 8 slices thick bread (Challah or Brioche preferred)
  • 2 large eggs
  • 1 cup milk (or a plant-based alternative)
  • 1 tsp vanilla extract
  • 1 pinch salt
  • as needed Butter or oil, for frying

Preparation

  • In a bowl, mix the softened cream cheese, chopped strawberries, and powdered sugar. Stir until combined and set aside.
  • In another bowl, whisk together the eggs, milk, vanilla extract, and a pinch of salt until well blended.

Assembly and Cooking

  • Take a slice of bread, spread a generous amount of the cream cheese filling on one side, and top with another slice to create a sandwich. Repeat for the remaining slices.
  • Preheat a large skillet or griddle over medium heat and add a small amount of butter or oil.
  • Dip each sandwich into the egg mixture, letting it soak for a couple of seconds on each side.
  • Carefully place the soaked sandwiches on the skillet and cook for about 3-4 minutes on each side or until golden brown and crispy.
  • Transfer the French toast to a plate, dust with powdered sugar, and serve warm.

Notes

For best results, use thick brioche or challah bread. The filling can be made a night before to enhance flavors. Experiment with different fruits for variations.
