  • ½ cup unsalted butter, softened Should be at room temperature.
  • ½ cup brown sugar Packed tightly.
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-Ins

  • 1 cup fresh strawberries, diced Use ripe, juicy berries for best results.
  • ½ cup chocolate chips You can use dark, milk, or white chocolate.

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.
  • In a bowl, whisk together the flour, baking soda, and salt to create your dry mixture.
  • In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.
  • Add in the egg and vanilla extract, mixing until well combined.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • Fold in the diced strawberries and chocolate chips gently, ensuring even distribution throughout the dough.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, serve with a scoop of vanilla ice cream or a drizzle of strawberry sauce. Store cookies in an airtight container.
