For the Cheesecake Layer

  • 8 ounces Cream Cheese, softened
  • 1 cup Granulated Sugar, divided Use ¼ cup for strawberries and ¾ cup for cream cheese layer
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs

For the Cake

  • 1 box Vanilla or White Cake Mix (about 15.25 ounces)
  • ½ cup Unsalted Butter, melted
  • 1 cup Whole Milk Recommended for best flavor

For the Fruit

  • 2 cups Strawberries, diced (fresh or frozen, thawed)

Optional Toppings

  • Whipped cream, fresh strawberry slices, or nuts For serving

Instructions

Preparation

  • Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  • Prepare the Strawberries: In a medium bowl, mix the diced strawberries with ¼ cup of granulated sugar and let them sit while you prepare the rest of the cake.
  • Make the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese with ¾ cup of granulated sugar and vanilla extract until smooth. Then add the eggs one at a time, mixing well after each addition.

Layering and Baking

  • Layer the Ingredients: In a greased 9x13-inch baking dish, pour the cream cheese mixture first, then evenly distribute the sugared strawberries over the cream cheese layer.
  • Add the Cake Mix: Sprinkle the dry cake mix evenly over the strawberry-layered cheesecake. Do not mix; just let it sit on top.
  • Melt the Butter: Pour the melted butter evenly over the dry cake mix.
  • Bake: Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and bubbling.
  • Cool and Serve: Allow it to cool for at least 15 minutes before serving. Top with whipped cream or slices of fresh strawberries, if desired.

Notes

Feel free to substitute strawberries with other fruits, like blueberries or raspberries. Keep an eye on your cake in the last 10 minutes of baking to prevent over-browning.
