Preparation

  • Wash and hull about 1 cup of fresh strawberries. Blend them in a food processor until smooth, leaving some pieces for a chunky texture if desired.
  • In a large mixing bowl, add the softened cream cheese and beat it with an electric mixer on medium speed until creamy and smooth.
  • Gradually add in the powdered sugar, mixing until well combined.
  • Pour in the vanilla extract and continue to beat the mixture until everything is well blended.
  • Gently fold in the whipped topping until it’s fully mixed with the cream cheese mixture to achieve the signature light and fluffy texture.
  • Carefully mix in the strawberry puree, reserving some for topping if desired. Add in the chunks of strawberries for an extra burst of fruitiness.
  • Transfer the dip to a serving bowl, drizzle the reserved strawberry puree on top, and refrigerate for about 30 minutes to let the flavors meld.
  • Serve with graham crackers and fresh fruit.

Notes

Substitutions can include swapping powdered sugar for honey or agave for a more natural sweetener. It is recommended to use Greek yogurt instead of cream cheese for a lighter version. Make the dip ahead of time; it keeps well in the fridge for about 2-3 days. Avoid using unsweetened cream cheese to maintain flavor.
