Main Ingredients

  • 2 lbs beef chuck roast Opt for a well-marbled cut for tenderness.
  • 2 cups fresh strawberries, hulled and sliced Only use fresh strawberries for the best flavor.
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup BBQ sauce Use your favorite brand or homemade.
  • 1 tbsp balsamic vinegar
  • to taste Salt and pepper
  • Fresh basil or mint for garnish (optional)

Instructions
 

Preparation

  • Trim any excess fat from the beef chuck roast and cut it into smaller chunks for quicker cooking.
  • Heat a large skillet over medium-high heat with a little oil and sear the beef chunks on all sides until browned.

Cooking

  • Transfer the browned beef to a slow cooker. In the same skillet, add diced onions and minced garlic and sauté until translucent.
  • Add the strawberries, BBQ sauce, and balsamic vinegar to the mix, stirring well.
  • Pour the strawberry mixture over the beef roast in the slow cooker. Season with salt and pepper, cover, and cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.

Serving

  • Once cooked, shred the beef with a fork and mix it with the sauce. Serve warm, garnished with fresh basil or mint if desired.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to three days or freeze in freezer-safe containers for up to three months. Reheat gently on low heat or microwave, adding a splash of water to keep it moist.
