  • 1.5 pounds flank steak or sirloin, cut into 1-inch thick slices
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 2-3 cloves garlic, minced
  • 1 bell pepper (red or green), sliced
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions
 

Preparation

  • Season the steak slices with salt and pepper. Make sure they’re evenly coated for maximum flavor.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat. Add the steak slices and sear them for about 3-4 minutes on each side until browned. Remove and set aside.
  • In the same skillet, add the sliced onion and bell pepper. Sauté until they soften, about 5 minutes. Toss in the minced garlic and sauté for an additional minute.
  • Pour in the diced tomatoes along with their juices. Add oregano, basil, and stir to combine. Bring the mixture to a simmer.
  • Return the steak slices to the skillet, reducing the heat to low. Cover and let them simmer in the tomato sauce for about 10-15 minutes.

Serving

  • Once the steak is tender, taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.

Notes

Pair with garlic bread, light salad, or creamy mashed potatoes. Store in airtight container in refrigerator for up to 3 days or freeze for up to 3 months.
