Pasta and Sauce Ingredients

  • 8 oz pasta (fettuccine or your preferred type)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese Freshly grated melts better than pre-grated
  • 4 cloves garlic (minced)
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

  • 2 pieces steaks (ribeye or sirloin, around 1 inch thick) High-quality steak recommended

Cooking the Pasta

  • In a large pot, bring salted water to a boil and add the pasta. Cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water for later.

Preparing the Steak

  • While the pasta cooks, season the steaks with salt and pepper on both sides.
  • Heat a tablespoon of olive oil in a skillet over medium-high heat. Add the steaks and sear for about 4-5 minutes on each side or until they reach your desired level of doneness.
  • Remove from the pan and let rest.

Making the Sauce

  • In the same skillet, add the remaining olive oil and sauté the minced garlic for about 30 seconds until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer.
  • Gradually whisk in the Parmesan cheese, stirring until smooth and creamy.

Combining the Dish

  • Add the cooked pasta to the sauce, tossing to coat well.
  • If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.

Serving

  • Slice the steaks and lay them atop the creamy pasta.
  • Garnish with fresh parsley and extra Parmesan if desired.

Notes

Serve with garlic bread or a light arugula salad with lemon vinaigrette. Quality steak enhances flavor.
