Ingredients
  

Crust

  • 1 cup graham cracker crumbs
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter (melted)

Filling

  • 1 pint chocolate ice cream (softened)
  • 1 pint cherry ice cream (softened)
  • 1 pint pistachio ice cream (softened)
  • 1/4 cup chopped pistachios (for garnish)

Preparation

  • In a large mixing bowl, combine the graham cracker crumbs and cocoa powder. Pour in the melted butter and mix well until the crumbs are thoroughly coated and resemble wet sand.
  • Press the mixture firmly into the bottom of a greased 9×13 inch baking pan to form an even crust.
  • Spread the softened chocolate ice cream evenly over the crust, smoothing it out with a spatula.
  • Layer the cherry ice cream over the chocolate layer, followed by the pistachio ice cream.
  • Cover the pan with plastic wrap or foil and freeze for at least 4 hours.
  • Once frozen, let the bars sit at room temperature for 5-10 minutes to soften slightly before cutting into squares.
  • Garnish with chopped pistachios before serving.

Notes

Keep stored in an airtight container in the freezer for up to a month. Avoid repeated thawing and refreezing for best texture.
