Ingredients
  

For the Salad

  • 1 lb fresh asparagus, trimmed Look for bright green stalks with tightly closed tips.
  • 2 tablespoons olive oil For drizzling over asparagus.
  • Salt and pepper, to taste To season the asparagus.
  • 2 cups romaine lettuce, chopped
  • ½ cup homemade Caesar dressing See below for the dressing recipe.
  • ½ cup croutons Homemade or store-bought.
  • ¼ cup grated Parmesan cheese For topping.

Preparation

  • Start by rinsing the asparagus under cool water and trimming the woody ends.
  • Place the asparagus on a large baking sheet or bowl. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat evenly.
  • Preheat your grill or grill pan over medium-high heat.

Grilling

  • Lay the seasoned asparagus across the grill grates. Grill for about 5-8 minutes, turning occasionally until they are tender and marked with beautiful grill lines.

Assembly

  • While the asparagus is grilling, place the chopped romaine lettuce into a large salad bowl.
  • Once the asparagus is done, let it cool slightly before cutting it into pieces and adding to the bowl with the lettuce.
  • Drizzle your homemade Caesar dressing over the salad, and toss gently to combine everything.
  • Finish with the croutons and grated Parmesan cheese. Serve immediately and enjoy!

Notes

If you have leftovers, store the salad in an airtight container in the refrigerator for up to 2 days. To keep the crispness of the asparagus and lettuce, keep the dressing separate until ready to eat. This salad doesn’t freeze well.
