  • 2 cups fresh spinach (washed and chopped)
  • 1 cup feta cheese (crumbled)
  • 1 cup shredded mozzarella cheese (optional) For added creaminess
  • 4 whole whole-wheat or regular tortillas
  • 1 tablespoon olive oil
  • to taste Salt

Preparation

  • In a skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper to taste.
  • Remove the skillet from heat and stir in the crumbled feta cheese. If you're using mozzarella cheese, add it in as well for that luscious, gooey texture.
  • Place half of the tortilla on a clean surface. Spoon the spinach and cheese mixture onto one half of the tortilla. Fold the other half over to create a semi-circle.
  • Heat a clean skillet over medium heat. Add the quesadilla and cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Remove from the skillet, slice into wedges, and serve warm with your choice of salsa, sour cream, or guacamole.

Notes

Tips: Experiment with different cheeses like ricotta or provolone for new flavors. Add herbs or spices like oregano or garlic powder for extra taste. Avoid overstuffing the quesadilla.
