Ingredients
  

For the shrimp

  • 1 pound Shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cayenne pepper Adjust to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and pepper

For assembly

  • 8 small Corn tortillas
  • 1 Mango, diced
  • 1/2 Red onion, finely chopped
  • 1/4 cup Cilantro, chopped
  • from 1 lime Lime juice
  • optional Avocado, sliced for topping

Instructions
 

Preparation

  • In a bowl, combine the olive oil, garlic powder, cayenne pepper, cumin, paprika, salt, and pepper. Toss the shrimp in the mixture until well-coated.

Cooking

  • Heat a non-stick skillet over medium-high heat. Add the shrimp, cooking for about 2-3 minutes on each side, until they are pink and opaque.

Making the Mango Salsa

  • While the shrimp cooks, combine the diced mango, red onion, cilantro, and lime juice in a separate bowl. Mix well and season with salt to taste.

Assembling

  • Warm the corn tortillas in a dry skillet for 30 seconds on each side until they are pliable.
  • Place a few shrimp in each tortilla, top with mango salsa, and add sliced avocado if desired. Serve immediately.

Notes

For optimal taste, pair with a refreshing Cucumber Salad or Mexican Street Corn. Store leftovers separately to maintain freshness.
