Preparation

  • Preheat your oven to 425°F (220°C).
  • Rinse the potatoes under cold water and cut them into bite-sized cubes, keeping the skin on for added texture and flavor.
  • In a large bowl, combine the olive oil, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. Add the potato cubes and toss until they are evenly coated.

Cooking

  • Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
  • Garnish with fresh parsley if desired. Serve hot.

Notes

For extra crispiness, soak the cubed potatoes in cold water for 30 minutes before seasoning and roasting. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven.
