Ingredients
  

For the batter

  • 2 cups corn kernels (fresh or frozen)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 unit jalapeño, finely chopped optional, for extra spice
  • 1 cup shredded cheese (like cheddar or pepper jack)
  • 2 units eggs
  • ½ cup milk
  • Oil for frying oil for frying

Preparation

  • In a large mixing bowl, combine the corn, flour, baking powder, salt, and cayenne pepper. If you like it spicy, toss in the chopped jalapeño!
  • In another bowl, whisk together the eggs and milk. Pour the wet mixture into the dry ingredients and mix until just combined. Fold in the shredded cheese.

Cooking

  • Heat about ½ inch of oil in a frying pan over medium heat.
  • Using a spoon, drop a generous spoonful of batter into the hot oil. Ensure to leave space between each one for frying.
  • Cook the bites for 2-3 minutes on each side, or until they’re golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Notes

Adjust spice level according to taste. Frying temperature is crucial for achieving crispiness. You can prepare the batter in advance and store it in the fridge.
