Preparation

  • Preheat your waffle iron to the desired setting according to the manufacturer’s instructions.
  • In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix well to ensure that all dry ingredients are fully incorporated.
  • In a separate bowl, whisk together the milk, eggs, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if there are some lumps.
  • Fold in the shredded cheddar cheese and diced jalapeños.

Cooking

  • Once your waffle iron is hot, spray it lightly with cooking spray (if needed) to prevent sticking.
  • Scoop the batter into the waffle iron (the amount will depend on your specific machine), and close the lid. Cook until the waffles are golden brown and crispy, typically about 4-5 minutes.
  • Carefully remove the waffles and serve immediately, garnished with your favorite toppings.

Notes

For a milder flavor, remove the seeds from the jalapeños or use fewer overall. Get creative with toppings like avocado slices or a fried egg!
