  • 0.5 cups brown sugar
  • 0.5 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cups milk
  • 2 large ripe pears, peeled and diced Choose ripe pears for best flavor

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing or lining with muffin liners.
  • In a medium bowl, combine the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk together until well-incorporated.
  • In a large bowl, combine the vegetable oil, brown sugar, and granulated sugar. Mix until smooth, then add the eggs, vanilla extract, and milk. Stir until fully combined.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just mixed. Be careful not to over-mix!
  • Gently fold in the diced pears until evenly distributed throughout the batter.

Baking

  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
