- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1/4 cup honey plus extra for drizzling
Preheat the oven to 425°F (220°C) and lightly grease a muffin tin.
In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until combined.
In a separate bowl, whisk the milk, eggs, and melted butter.
Pour the wet ingredients into the dry mixture and stir until just combined (don't overmix!).
Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake for 15-20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
While the poppers are baking, mix together the butter and honey in a small bowl until well blended.
Once cooled, drizzle the honey butter over the warm poppers and enjoy!
