  • 1 teaspoon baking powder To give the pillows that fluffy rise.
  • 0.5 teaspoon salt To elevate all the flavors.
  • 2 tablespoons fresh parsley Optional, for a touch of freshness.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, add the ricotta cheese, almond flour, grated Parmesan cheese, eggs, baking powder, and salt. Use a spatula or wooden spoon to mix until just combined.
  • Line a baking tray with parchment paper.
  • With slightly wet hands, scoop out about a tablespoon of the mixture and form it into a pillow shape. Place each pillow on the baking sheet.

Cooking

  • Bake for about 25-30 minutes, or until the edges are golden and crispy.
  • Let the pillows cool for a few minutes before serving.

Notes

Serve warm with honey drizzled on top or as a side dish with sautéed vegetables. Substitutions include using plant-based ricotta and oat flour.
