  • 1 cup creamy peanut butter Ensure it's halal-compliant.
  • 1 cup brown sugar, packed
  • 1 tsp baking soda
  • 1 large egg Use at room temperature for better mixing.
  • 1 tsp vanilla extract Optional for added flavor.
  • 1 pinch salt
  • ½ cup chocolate chips or chopped nuts Optional for extra flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the creamy peanut butter, brown sugar, baking soda, egg, and a pinch of salt. If using, add the vanilla extract. Mix until well combined and smooth.
  • Use a tablespoon to scoop out the cookie dough and roll each scoop into a ball. Place them on the prepared baking sheet, leaving space between each cookie.
  • Flatten each dough ball slightly with a fork to create a crisscross pattern. If using chocolate chips or nuts, sprinkle them on top.

Baking

  • Bake the cookies in the preheated oven for about 10-12 minutes, or until the edges start to turn a light golden color. They may look soft in the center, but they'll firm up as they cool.

Cooling

  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer freshness, freeze the baked cookies for up to three months.
