Ingredients
  

Dry Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon salt

Wet Ingredients

  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/3 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  • In a medium-sized bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt until well combined. Set aside.
  • In a large mixing bowl, beat the softened butter and granulated sugar together until creamy and fluffy, approximately 2-3 minutes.
  • Add the molasses, egg, and vanilla extract, mixing until fully incorporated and scraping the sides of the bowl as needed.
  • Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to over-mix.

Baking

  • Use a tablespoon to scoop out dough, roll into balls, then roll each ball in additional granulated sugar.
  • Place the rolled cookies on the prepared baking sheet, spaced a few inches apart, then bake for 10-12 minutes, or until the cookies are puffy but still soft in the center.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For perfect cookies, consider chilling the dough for 30 minutes before baking for a thicker texture and adjust spices to your taste.
