  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Mix in the mashed bananas, egg, and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add this mixture to the wet ingredients, stirring until just combined.
  • Gently fold in the chocolate chips until they are evenly distributed throughout the dough.

Baking

  • Using a cookie scoop or spoon, drop heaping tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, chill the dough for 30 minutes before baking and avoid overmixing to ensure soft cookies.
