S'mores Sushi No-Bake Treat

Ingredients
  

Base ingredients

  • 1 cup graham cracker crumbs
  • 1 cup mini marshmallows
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1/4 cup butter (or coconut oil for a vegan alternative)

Optional toppings

  • to taste sprinkles
  • to taste chopped nuts
  • to taste additional melted chocolate for drizzling

Preparation

  • In a medium-sized bowl, melt the butter and chocolate chips together in the microwave in short bursts. Stir until smooth and well combined.
  • In another bowl, combine the graham cracker crumbs and marshmallows with your melted chocolate mixture. Stir until everything is well coated.
  • Spread the mixture onto a sheet of parchment paper, forming it into a rectangle about 1/2 inch thick. Use your hands or a spatula to smooth it out evenly.
  • Once evenly spread, carefully roll the mixture up into a tight cylinder, using the parchment paper to help.
  • Place the rolled sushi in the refrigerator for about 20-30 minutes to firm up.
  • Once chilled, remove from the fridge and slice into 1-inch pieces. Arrange decoratively on a platter.
  • If desired, drizzle with melted chocolate and sprinkle with toppings.

Notes

For gluten-free, use gluten-free graham crackers. For dairy-free, use vegan chocolate and coconut oil. Allow ample chilling time for best results.
