Ingredients
  

Cookie Base Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Filling Ingredients

  • 2 cups semi-sweet chocolate chips
  • 2 cups mini marshmallows
  • 1/2 cup crushed graham crackers for the topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan with non-stick spray or line it with parchment paper.
  • In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  • Beat in the eggs one at a time, followed by the vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients and mix until just combined.
  • Fold in 1.5 cups of the chocolate chips.

Assembly

  • Spread about two-thirds of the cookie mixture evenly into the prepared baking pan. Press it down gently to form a base.
  • Top with the mini marshmallows and the remaining chocolate chips. Crumble the remaining cookie dough over the top and sprinkle with crushed graham crackers.

Baking

  • Bake in the preheated oven for about 30-35 minutes or until golden brown.

Cooling and Serving

  • Allow the bars to cool for at least 15 minutes before slicing into squares.

Notes

Store leftover bars in an airtight container at room temperature for up to 4 days or in the refrigerator for up to a week. They can be frozen for up to 3 months.
