  • 1 pound white beans, soaked overnight Ensure beans are soaked overnight for even cooking.
  • 1 pound turkey ham, diced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • Salt and pepper to taste

Preparation

  • Drain and rinse the soaked white beans.
  • Dice the turkey ham, chop the onion, slice the carrots, chop the celery, and mince the garlic.

Cooking

  • Combine the drained white beans, diced turkey ham, chopped onion, sliced carrots, chopped celery, and minced garlic in a slow cooker.
  • Pour in the chicken broth, stir in the dried thyme, bay leaf, salt, and pepper.
  • Cover and set the slow cooker to low for 6-8 hours or high for 4-5 hours.
  • Once cooked, remove the bay leaf and ladle the soup into bowls.

Serving

  • Add your favorite toppings like fresh parsley, croutons, or a drizzle of olive oil before serving.

Notes

For variations, substitute turkey ham with diced chicken breast or mushrooms for a vegetarian option. To thicken the soup, mash a portion of the beans before serving. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat on the stove over medium heat, adding broth or water if needed.
