  • 3 pounds russet or Yukon gold potatoes, peeled and cut into quarters
  • 1 packet Lipton onion soup mix
  • 1 cup water
  • 1/4 cup unsalted butter (or a halal-friendly butter substitute)

Instructions
 

Preparation

  • Start by peeling and cutting your potatoes into quarters to ensure even cooking.
  • Place the quartered potatoes in the bottom of your slow cooker.

Mixing

  • In a separate bowl, combine the Lipton onion soup mix with water and mix until dissolved.
  • Pour the onion soup mixture over the potatoes. Dot the top with small pieces of butter.
  • Sprinkle some salt and pepper over everything to enhance the flavor.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and fluffy.
  • Check for doneness by poking the potatoes with a fork; they should fall apart easily.

Serving

  • Once cooked, give everything a gentle stir, and serve hot. Garnish with chopped fresh parsley if desired.

Notes

Leftovers can be stored in the fridge for up to 3 days in an airtight container or frozen for up to a month. To reheat, warm a portion in the microwave or in a pot on low heat, stirring occasionally.
