  • 1.5 pounds flank steak, sliced thinly against the grain Slice against the grain for tenderness.
  • 1 large onion, sliced
  • 1 large green bell pepper, sliced
  • 1 cup beef broth Add more for a saucier sandwich if desired.
  • 1 tablespoon Worcestershire sauce
  • to taste salt and pepper
  • 4-6 pieces hoagie rolls Toast for extra crunch if desired.
  • 8 ounces provolone cheese, sliced or shredded Other cheese options include mozzarella or pepper jack.

Preparation

  • Start by slicing your flank steak thinly against the grain for tenderness.
  • Slice your onion and bell pepper into thin strips.

Cooking

  • In the slow cooker, add the sliced beef, onion, bell pepper, beef broth, Worcestershire sauce, salt, and pepper. Stir everything together.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, depending on your time availability.

Assembly

  • Once cooked, shred the beef if desired and mix everything well.
  • Toast the hoagie rolls if you prefer a slight crunch. Fill each roll generously with the beef mixture.
  • Top with slices or shreds of provolone cheese. Broil for a few minutes if you want melted cheese.

Serving

  • Serve these hearty sandwiches hot and enjoy!

Notes

For leftovers, store the beef mixture in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat by simmering in a skillet with a splash of beef broth.
