  • 1 pound ground beef
  • 3 medium potatoes, diced
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • 2 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup frozen peas (optional)

Preparation

  • In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  • In a slow cooker, add the diced potatoes, bell pepper, onion, garlic, and the cooked ground beef.
  • Pour in the beef broth and add the salt, black pepper, and paprika. Stir until all ingredients are well combined.

Cooking

  • Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, allowing the flavors to meld together.
  • About 30 minutes before serving, add the frozen peas for added flavor and color.

Serving

  • Once cooked, give it a good stir and serve hot. Garnish with fresh parsley for a vibrant touch.

Notes

Feel free to substitute ground beef with turkey or chicken for a lighter option. You can also adjust cooking time based on your schedule. Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
