  • 4 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter or ghee
  • 4 cups beef or vegetable broth (Halal-compliant)
  • 1 tablespoon sugar helps with caramelization
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme or 2 teaspoons fresh thyme
  • 1 baguette or crusty bread, sliced
  • 2 cups shredded Halal cheese (Gruyère or Swiss) works beautifully

Preparation

  • Place the sliced onions in your slow cooker. Add the butter (or ghee) and sugar. Stir to coat the onions evenly.
  • Cover your slow cooker and set it to low heat. Allow the onions to cook for about 8 hours, stirring occasionally if you can. They should become golden and caramelized.
  • Once the onions are nicely caramelized, add the beef or vegetable broth, salt, pepper, and thyme. Stir everything together.
  • Cover the slow cooker again and let it cook on low for an additional hour. This allows all the flavors to meld beautifully.
  • While the soup is finishing up, toast your sliced baguette in the oven until golden brown.
  • Ladle the soup into bowls, top each with a slice of toasted bread, and sprinkle generously with shredded cheese. You can pop the bowls under the broiler for a few minutes until the cheese is bubbly and golden.

Notes

For perfect caramelization, don’t rush the process. If you can't find Gruyère, substitute with any Halal cheese that melts well. If short on time, cook on high for 4 hours. Store leftovers in airtight containers in the refrigerator for up to 3 days or freeze for up to a month (leave out cheese until reheating).
