Main Ingredients

  • 1 pound ground beef (Halal-certified) Can be substituted with turkey or plant-based alternatives.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup diced onion
  • 2 cups shredded cheese (Cheddar or your favorite blend) Add about 30 minutes before serving.
  • 1 tablespoon minced garlic
  • 1 tablespoon chili powder
  • Salt and pepper to taste

Optional Toppings

  • Sliced green onions
  • Diced avocado
  • Sour cream (Halal)

Preparation

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • In your slow cooker, layer the browned beef, black beans, kidney beans, frozen corn, diced tomatoes, diced onion, minced garlic, chili powder, and season with salt and pepper.
  • Stir the mixture well to combine all the ingredients.

Cooking

  • Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, sprinkle the shredded cheese on top and cover again to let the cheese melt.
  • Once everything is cooked and bubbly, serve hot with your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Thaw overnight before reheating.
