Main Ingredients

  • 1 lb ground beef (or turkey for a lighter option) Use ground turkey for a lighter version.
  • 1 can kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes (28 oz)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • to taste Salt and pepper Season according to your preference.

Preparation

  • In a skillet over medium heat, brown the ground meat until it’s fully cooked. Drain off any excess fat.
  • In a slow cooker, add the cooked meat, kidney beans, black beans, diced tomatoes, chopped onion, minced garlic, chili powder, cumin, and smoked paprika. Stir everything well to combine.
  • Sprinkle with salt and pepper. Remember to taste and adjust seasoning to your liking.

Cooking

  • Cover your slow cooker and set it on low for about 6 hours. If you’re in a hurry, setting it on high for about 3 hours works too.

Serving

  • When you’re ready to eat, check if the chili has thickened to your liking. Use a ladle to serve into bowls and add your favorite toppings like cheese, sour cream, or avocado.

Notes

Customize the spice level with jalapeños or red pepper flakes. Letting the chili sit overnight can enhance flavors. For storage, cool in an airtight container up to 4 days in the fridge or freeze for 3 months.
