Preparation

  • Pat the chicken thighs dry with paper towels to ensure a crispy skin.
  • Season both sides of the chicken with salt, black pepper, garlic powder, onion powder, and smoked paprika. Let rest for about 10 minutes.

Cooking

  • Heat the olive oil in a large skillet over medium-high heat until shimmering.
  • Place the seasoned chicken thighs skin-side down in the hot skillet. Sear for about 7-8 minutes, without moving them.
  • Flip the chicken thighs and reduce the heat to medium. Cook for an additional 10-12 minutes, until the internal temperature reaches 165°F (75°C) and juices run clear.

Serving

  • Remove the chicken from the skillet and let it rest for 5 minutes before serving.
  • Garnish with fresh herbs and lemon slices.

Notes

Substitutions: For boneless thighs, adjust the cooking time as they may cook faster. Always allow the chicken to rest after cooking to keep it juicy. Avoid overcrowding the skillet to ensure proper searing.
