- 3 ripe bananas mashed
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 large egg beaten
- 1/4 cup milk
- 1 teaspoon vanilla extract
- vegetable oil for frying
- powdered sugar for dusting
Prepare the Batter: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt.
Combine Wet Ingredients: In another bowl, combine the mashed bananas, beaten egg, milk, and vanilla extract. Mix until well combined.
Mix the Batter: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
Heat the Skillet: Heat about 1/4 inch of vegetable oil in a skillet over medium heat until hot but not smoking.
Fry the Fritters: Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon. Fry until golden brown, about 2-3 minutes per side. Transfer to a plate lined with paper towels to drain excess oil.
Serve: Dust the fritters with powdered sugar before serving. Enjoy warm.
