Simple Moo Goo Gai Pan

Ingredients
  

  • 2 tablespoons olive oil divided
  • 1 pound chicken thighs or breasts cubed
  • Salt and pepper
  • 3 large carrots sliced

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Season the cubed chicken with salt and pepper, then add it to the skillet. Cook until browned and cooked through, about 5-7 minutes.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add another tablespoon of olive oil. Add the sliced carrots and cook until tender, about 4-5 minutes.
  • Return the chicken to the skillet, mix with the carrots, and cook for an additional 2 minutes.
  • Serve hot.
