Simple Moo Goo Gai Pan

- 2 tablespoons olive oil divided
- 1 pound chicken thighs or breasts cubed
- Salt and pepper
- 3 large carrots sliced
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Season the cubed chicken with salt and pepper, then add it to the skillet. Cook until browned and cooked through, about 5-7 minutes.
Remove the chicken from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil. Add the sliced carrots and cook until tender, about 4-5 minutes.
Return the chicken to the skillet, mix with the carrots, and cook for an additional 2 minutes.
Serve hot.
