Ingredients
  

For the dough

  • 2 cups all-purpose flour
  • 1/2 tablespoon instant yeast
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 3/4 cup warm water
  • 2 tablespoons olive oil plus more for greasing

For the filling and topping

  • 1/2 cup your favorite jam
  • Powdered sugar for dusting

Preparation

  • In a mixing bowl, combine flour, yeast, salt, and sugar. Gradually add warm water and olive oil, mixing until a sticky dough forms.
  • Transfer the dough to a floured surface and knead for about 5 minutes, until it is smooth and elastic.
  • Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm spot for about 1 hour, or until doubled in size.
  • Once risen, gently punch down the dough to release any air. Transfer it to a greased baking tray and stretch it out to fit the tray.
  • Using your fingers, make deep indentations in the dough, stressing not to poke through. Fill each indentation with a spoonful of jam.
  • Let the focaccia rise for another 30 minutes, allowing it to puff up again.

Baking

  • Preheat the oven to 375°F (190°C) and bake for 20-25 minutes, or until golden brown.
  • Once out of the oven, allow it to cool slightly, then dust with powdered sugar.

Notes

Use fresh ingredients for the best results. Experiment with different jam flavors or chocolate spread for variation. Watch the baking time as ovens may vary.
