  • 12 oz tortellini (fresh or frozen, store-bought) Cook according to package instructions.
  • 1 lb shrimp (peeled and deveined, Halal certified)
  • 4 cloves garlic (minced) The star of our sauce!
  • 3 tablespoons olive oil For sautéing.
  • 2 tablespoons butter For a rich flavor.
  • ½ cup Parmesan cheese (grated) Plus extra for serving.
  • ¼ cup fresh parsley (chopped) For garnish.
  • Salt and pepper To taste.
  • Red pepper flakes Optional, for added heat.

Instructions
 

Cooking the Tortellini

  • Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until they are al dente, usually around 3-5 minutes. Drain and set aside.

Sautéing the Shrimp

  • In a large skillet, heat the olive oil and butter over medium heat. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Add the shrimp, seasoning them with salt and pepper. Cook for approximately 3-4 minutes until they are pink and opaque.

Combining the Ingredients

  • Gently toss the sautéed tortellini with the cooked shrimp. If the mixture appears dry, add a splash of reserved pasta water to achieve the desired consistency.
  • Add the grated Parmesan and carefully combine.

Garnishing and Serving

  • Sprinkle chopped parsley and optional red pepper flakes over the dish for added color and flavor. Serve immediately with extra Parmesan on the side.

Notes

For ingredient substitutions, consider using Halal chicken or mixed vegetables for a vegetarian twist. Pay attention to shrimp cooking time to avoid rubberiness. Remember to taste and season throughout the cooking process.
