  • 1 cup long-grain rice (uncooked)
  • 1 pound shrimp (peeled and deveined)
  • 1 medium onion (chopped)
  • 1 medium bell pepper (chopped)
  • 2 stalks celery (chopped)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth (ensure it's halal-certified)
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • 2 green onions (sliced for garnish)
  • 1 tablespoon vegetable oil

Preparation

  • Start by rinsing the rice under cold water until the water runs clear to remove excess starch for a fluffier texture.
  • In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes or until the veggies become tender.
  • Toss in the minced garlic, Cajun seasoning, thyme, paprika, salt, and pepper. Cook for another minute until fragrant.
  • Next, add the shrimp to the skillet, stirring to mix everything. Cook until the shrimp turns pink (about 3-4 minutes).
  • Add the rinsed rice and chicken broth to the skillet. Bring the mixture to a boil, then reduce to low heat, cover, and let it simmer for about 20 minutes, or until the rice is cooked and fluffy.
  • Once cooked, remove the lid and fluff the rice with a fork, allowing it to cool for a minute. Serve hot, garnished with freshly sliced green onions.

Notes

If you're not a fan of shrimp, you can substitute it with chicken or a medley of vegetables to keep it vegetarian. Be careful not to overcook the shrimp, or they can become tough. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month.
