  • 1 cup fresh mushrooms, sliced (button, cremini, or shiitake)

  • 2 tablespoons olive oil (or vegetable oil)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced or grated
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • Salt and pepper, to taste

Preparation

  • Start by washing and chopping your asparagus and mushrooms. Clean the shrimp, ensuring they are peeled and deveined.

Cooking

  • In a large skillet or wok, heat the olive oil over medium-high heat for about a minute.
  • Add the minced garlic and ginger to the skillet. Sauté for about 30 seconds until fragrant.
  • Toss in the shrimp and season with a pinch of salt and pepper. Cook until the shrimp turns pink, about 3-4 minutes. Remove from the pan and set aside.
  • In the same skillet, add the asparagus and mushrooms. Stir-fry for about 5-6 minutes or until they are crisp-tender.
  • Return the shrimp to the skillet with the vegetables. Pour in the soy sauce and mix for another minute.
  • Garnish with sesame seeds and green onions if desired. Serve hot over steamed rice or enjoy it solo.

Notes

Don’t overcook the shrimp; keep everything crisp and vibrant. Feel free to swap vegetables and prep ingredients ahead of time for an easy meal.
